The Mountain Water Process is a natural decaffeination method developed by Descamex, a company based in Mexico. This chemical-free process uses pure glacial water from Pico de Orizaba, Mexico's highest peak, to gently remove caffeine.
During decaffeination, green coffee beans are soaked in mountain water, which dissolves both caffeine and flavour compounds. Activated carbon filters remove the caffeine and the flavour-rich water is reintroduced to the beans. This water, now free of caffeine, can also be used to extract caffeine from future batches.
The result is a 99.9% decaffeinated coffee that retains the aroma, body, and nuanced flavors of the original beans, making it popular among specialty roasters.
The Sugarcane Water Process is a decaffeination method pioneered by Descafecol, Colombia’s sole decaffeination plant. This process uses ethyl acetate (EA) a compound naturally derived from fermented sugarcane, combined with high mountain spring water, is celebrated for its ability to gently remove caffeine.
During decaffeination, EA selectively binds to caffeine molecules, leaving essential oils and sugars intact. Any remaining traces of EA evaporates completely during roasting, thanks to its low boiling point of 70°C.
The outcome is coffee that retains its original flavor profile while being 99.9% caffeine-free, making it a favored method among specialty roasters.
